Ingredients
  • 1 1/2 pounds Chicken drumsticksbone-in, skin-on
  • .67 cup Filipino soy sauceor use a mix of Chinese dark and light soy sauce
  • 1 cup Cane vinegaror use coconut vinegar, cider vinegar, or white vinegar
  • 5 ounces Palm sugaror use brown sugar
  • 15 Garlic clovessmashed
  • 2 Bay leaves
  • Black pepperground and whole peppercorns, to taste
  • Canola oilfor searing

    Season the chicken with a little salt.

    Heat canola oil in a wok or Dutch oven over medium-high heat.

    Sear the chicken until it starts to render fat, without browning too much.

    Add smashed garlic cloves to the pot.

    Add black pepper, both ground and whole peppercorns.

    Add palm sugar, soy sauce, and vinegar to the pot.

    Add bay leaves and stir to combine.

    Bring the mixture to a boil, then reduce to a simmer and cover.

    Simmer for about 30 minutes, then flip the chicken and continue to simmer for another 30 minutes.
