  • Pizza doughRested for about an hour
  • Olive oilFor oiling pan and crust
  • PepperoniTraditional topping

    Oil all sides of the Sicilian pan generously.

    Place the dough ball in the pan and add a light layer of oil.

    Press the dough out as much as possible and let it proof for about an hour.

    Press the dough to the edges and dimple it to prevent air bubbles.

    Cover and let it proof for at least 4 hours.

    Par bake the dough at 500°F for 8 minutes.

    Cool on a rack or freeze for later.

    Oil or butter the pan and build your pizza with toppings.

    Bake in the oven for 6 to 7 minutes at 500°F.

    Optionally, remove from the pan and bake directly on the steel for the last minute.
