Shakshuka

- •Cilantro(optional)chopped, for garnish

Dice the onion and mince the garlic cloves.

Heat olive oil in a large pan over medium heat until shimmering.

Add the diced onion to the pan and cook until translucent.

Add the diced bell pepper and cook until soft.

Stir in paprika, chili powder, and ground cumin, then add minced garlic. Cook for 2 minutes.

Add the whole peeled tomatoes, breaking them up with a spoon. Simmer until thickened.

Season with salt and pepper, then create wells in the sauce and crack eggs into them.
