  • 2 cups Self-raising flour
  • 2 teaspoons Baking powder(optional)Only if using plain flour
  • 1 teaspoon English mustard powder
  • 1/2 teaspoon Turmeric(optional)For color and flavor
  • 1/4 teaspoon Salt(optional)Only if using unsalted butter
  • 1/2 cup ButterCold and diced
  • 1 cup Cheddar cheeseGrated, mix of mature white cheddar and red Leicester
  • 1/2 cup MilkFull or half fat

    Preheat oven to 200°C (390°F).

    Mix dry ingredients: self-raising flour, baking powder (if using plain flour), mustard powder, turmeric, and salt (if using unsalted butter).

    Sift dry ingredients into a large bowl.

    Add diced butter and rub into flour until it resembles breadcrumbs.

    Add grated cheese and fold into the mixture.

    Pour milk over dry ingredients and combine using a knife, then bring together with hands.

    Roll dough into a rectangle, about 18x13 cm and 2.5 cm thick.

    Cut scones using a 6 cm cutter, reform scraps to cut additional scones.

    Place scones on a greased baking tray, optionally with cheese underneath.

    Brush tops with milk and add a little grated cheese.
