    Preheat oven to 425°F (220°C) and line a rimmed baking sheet.

    Place salmon on the baking sheet, drizzle with olive oil, and season with garlic salt and freshly cracked black pepper.

    Flake the salmon with two forks, removing any bones. Set aside and let cool to room temperature.

    Peel and finely dice the yellow onion. Seed and finely dice half a red bell pepper.

    Heat a medium skillet over medium heat. Add 1 tbsp olive oil and 1 tbsp butter, then sauté the onion and bell pepper for 7 to 9 minutes, stirring occasionally, until softened and golden.
