Rustic Vegetable Soup

- •1 Courgettes
- •2 CarrotsCut into chunks
- •2 LeeksSliced
- •1 OnionChopped
- •1 CeleriacPeeled and cubed
- •0.5 head Savoy cabbageChopped
- •3 tbsp Olive oil
- •1.5 liters Water
- •4 Vegetable stock pots
- •1 handful Celery leaves(optional)From the celery
- •1 handful Basil leaves(optional)Fresh
- •1 handful Parsley leaves(optional)Chopped
- •1 sprig Thyme(optional)
- •1 clove Garlic(optional)Minced

Heat olive oil in a large pan over medium heat.

Add carrots, celeriac, onions, and leeks. Cook until they start to soften, about 15 minutes.

Add cauliflower, cabbage, and courgettes. Cook for another 10 minutes.

Add water and vegetable stock pots. Bring to a boil, then simmer for 15 minutes.

Add celery leaves, basil, parsley, thyme, and garlic. Stir and cook for another 5 minutes.
