Score the chestnuts using kitchen scissors, cutting lengthwise across the belly.

Soak the chestnuts in filtered water or wine for at least two hours.

Preheat oven to 350°F (180°C). Drain chestnuts and arrange score-side up on a cookie sheet.

Roast in the oven for 20 minutes at 350°F, then increase to 425°F and roast for an additional 10-15 minutes.

Transfer to a bowl, cover with a towel, and let rest for 10-15 minutes to loosen skins.
