Preheat the oven to 180°C.

Cut the pumpkin into boats and remove seeds.

Season pumpkin with salt and pepper.

In a pestle and mortar, smash coriander seeds, red chilli, and cinnamon. Add olive oil.

Sprinkle the spice mixture over the pumpkin and roast for 45 minutes.

Rub the duck with salt and pepper, and roast for 2 hours at the same temperature.

For the dressing, mix lime juice, sesame oil, soy sauce, and unrefined sugar.

Grate red chilli and garlic into the dressing.

Slice spring onions and add to the dressing.

Chop coriander and mint, and mix with the dressing.

Combine roasted pumpkin, duck, and dressing. Toss gently.
