Ingredients
  • Rib of beefPreferred cut for roasting
  • Olive oil(optional)Or dripping, for roasting
  • Beef bonesFor making gravy
  • 1/2 liter Rich beef stockFor gravy
  • Cornflour(optional)To thicken gravy

    Preheat the oven and prepare the rib of beef by rubbing with olive oil or dripping.

    Caramelize the beef in a pan to give it color.

    Place beef bones in the roasting pan to act as a trivet, then place the beef on top.

    Roast the beef in the oven for 40-45 minutes until medium rare.

    Remove the beef and let it rest, using the bones and sediment to make the gravy.

    Add beef stock to the pan and season the gravy to taste.
