Ingredients
  • 250 grams Unsalted butterDivided into two parts
  • 2 cups All-purpose flour
  • 1/2 tsp Salt
  • 1/2 cup Cold water
  • 1 tsp Lemon juiceLime juice or vinegar can be used as a substitute

    Cut off one third of the butter and dice it into 13mm cubes. Keep the remaining butter in the fridge.

    Add flour and salt to a large bowl, mix, then add diced butter and rub in with fingers until lumps are gone.

    Add cold water and lemon juice, mix, and bring the dough together. Form into a rectangle and refrigerate for 1 hour.

    Prepare the remaining butter by rolling it into a 12cm square between parchment paper. Refrigerate for 30-45 minutes.

    Roll out the dough into a 30x18cm rectangle, place butter on top, fold, and roll out again. Repeat folding and rolling process four times, refrigerating for 20 minutes between each.

    After the final fold, refrigerate the pastry for 20 minutes. The puff pastry is now ready to use or store.
