  • 1 1/2 pounds Zucchinithinly sliced
  • 5 ounces Provolone cheeseshredded
  • 1 ounce Parmigiano Reggianofinely grated
  • 11 ounces Spaghettifor 4 servings
  • 2 tablespoons Extra virgin olive oil
  • 1 clove Garlicunpeeled
  • Salt(optional)to taste

    Thinly slice the zucchini to potato chip thinness using a mandolin.

    Fry the zucchini slices in oil at 300°F (150°C) until golden, then drain on absorbent towels and sprinkle with salt.

    Cook spaghetti in boiling water for three-quarters of the package's al dente time.

    Heat olive oil in a pan over medium heat and add the unpeeled garlic clove to flavor the oil.

    Add most of the fried zucchini chips to the pan with two ladles of pasta cooking water to create the sauce.
