Combine 310g of all-purpose flour with 150ml of boiled water and a generous pinch of salt. Mix to form a dough.

Knead the dough for 5-8 minutes until smooth. Let it rest covered for 1 hour.

Slice 1/4 head of cabbage thinly, season with salt, and massage to release moisture.

Combine cabbage with 1 lb ground pork, 3/4 cup sliced green onion, 2 grated garlic cloves, 1.5-inch grated ginger, and 2 tsp tamari. Mix thoroughly.

Roll dough into cylinders, cut into pieces, and roll into thin circles using a 3-inch cutter.

Fill each wrapper with 2 tsp of filling, wet edges, fold, and crimp to seal.
