Ingredients
  • 310 g All-purpose flour
  • 150 ml WaterBoiled
  • SaltGenerous pinch

  • 1/4 head CabbageCore removed, sliced thinly
  • 1 lb Ground pork
  • 3/4 cup Green onionThinly sliced
  • 2 cloves GarlicGrated
  • 1 1/2 in GingerGrated
  • 2 tsp Tamari
  • 2 tbsp OilFor frying
  • 1/4 cup WaterFor steaming
  • 1/4 cup TamariFor sauce
  • 1/4 cup Rice vinegarFor sauce
  • 2 tsp MirinFor sauce
  • 1 1/2 tsp Sesame oilFor sauce
  • 2 tsp HoneyFor sauce
  • 1/2 tsp Sesame seedsFor sauce

    Combine 310g of all-purpose flour with 150ml of boiled water and a generous pinch of salt. Mix to form a dough.

    Knead the dough for 5-8 minutes until smooth. Let it rest covered for 1 hour.

    Slice 1/4 head of cabbage thinly, season with salt, and massage to release moisture.

    Combine cabbage with 1 lb ground pork, 3/4 cup sliced green onion, 2 grated garlic cloves, 1.5-inch grated ginger, and 2 tsp tamari. Mix thoroughly.

    Roll dough into cylinders, cut into pieces, and roll into thin circles using a 3-inch cutter.

    Fill each wrapper with 2 tsp of filling, wet edges, fold, and crimp to seal.

    Heat 2 tbsp oil in a pan, add dumplings, and fry for 2-3 minutes until bottoms are brown.

    Add 1/4 cup water to the pan, cover, and steam for 3 minutes. Remove lid and cook until water evaporates.

    Mix sauce ingredients: 1/4 cup tamari, 1/4 cup rice vinegar, 2 tsp mirin, 1.5 tsp sesame oil, 2 tsp honey, 1/2 tsp sesame seeds.
