Potato Patties with Cucumber Salad

- •30 g Parmesan cheese

- •2 tbsp Sour cream
- •1 tbsp Mayonnaise

- •2 cloves Garlic
- •1 tbsp Soy sauce
- •1/2 tsp Rice vinegar
- •1/2 tsp White sugar
- •1/2 tsp Sesame oil
- •Salt(optional)a pinch
- •1 tsp Gingerdiced
- •1 tbsp White sesame seeds

Dice the potato and place in a pot with water. Cook for 15 minutes on medium-high heat.

Drain the water and mash the potatoes.

Slice the onion and shred the carrot.

Heat olive oil in a pan on medium heat. Cook the onion for 2 minutes, then add the carrot and cook for another 3-5 minutes.

Add the cooked onion and carrot to the mashed potato and mix well.

Add egg, flour, parmesan cheese, parsley, salt, black pepper, and paprika to the potato mixture and mix well.

Scoop some potato mixture and shape it into a ball. Coat in bread crumbs.

Heat vegetable oil in a pan on medium heat. Fry the patties for 3-5 minutes on each side until golden brown.

Thinly slice the cucumber and add 1 tsp salt. Let sit for at least 10 minutes, then squeeze out excess liquid.

Mix sour cream, mayonnaise, dill, and garlic for the sauce.

Mix soy sauce, rice vinegar, white sugar, sesame oil, and a pinch of salt. Add diced ginger and roasted sesame seeds to the cucumbers and mix well.
