Ingredients
  • Beef ribs
  • Beef shoulder
  • Beef bones
  • 2 CarrotsPeeled and cut
  • 2 TurnipsPeeled and cut
  • 2 LeeksCleaned and cut
  • 4 PotatoesPeeled
  • 1 OnionWhole with cloves
  • 4 Cloves
  • 2 stalks Celery
  • 1 tbsp Black peppercorns
  • 1 tbsp Salt
  • 4 liters WaterCold

    Place beef bones and meat in a large pot.

    Add 3 liters of cold water and bring to a boil.

    Skim impurities from the surface.

    Add 300 ml of cold water, bring to a boil, and skim again. Repeat twice.

    Add vegetables and aromatics to the pot.

    Simmer for about 3 hours, skimming occasionally.

    Remove and discard overcooked vegetables after 1 hour.

    Cook fresh vegetables separately in broth for serving.
