- •1 1/2 teaspoons Salt
- •110 grams Butter
- •130 grams Lard
- •200 grams Water
- •300 grams Lean porkFinely chopped
- •1000 grams Minced pork
- •1/2 teaspoon Salt
- •1/2 teaspoon Thyme
- •1/2 teaspoon Sage
- •1/4 teaspoon Ground white pepper
- •1/4 teaspoon Cayenne pepperFor extra heat

Mix flour and salt in a bowl.

In a pan, combine butter, lard, and water. Bring to a simmer.

Pour the liquid into the flour and mix to form a dough.

Knead the dough lightly, wrap in cling film, and refrigerate for at least 2 hours.

Chop lean pork into small pieces.

Grind the remaining pork and mix with chopped pork.

Mix salt, thyme, sage, white pepper, and cayenne pepper into the pork mixture.
