Pork, Apricot, and Pistachio Stuffing

- •1 Braeburn appleGrated
- •1 handful Chopped apricots
- •1 handful Pistachio nutsChopped
- •1 Lemon zestGrated
- •1 handful ParsleyChopped

Add pork mince to a bowl, season with salt and pepper, and mix.

Grate a Braeburn apple into the mixture.

Add a handful of chopped apricots and a handful of chopped pistachio nuts. Mix well.

Grate lemon zest into the mixture and add a handful of chopped parsley. Mix again.

Wrap the mixture in sage leaves, drizzle with olive oil, and season.

Place merguez sausage in the center of the mixture, encase it with the rest of the stuffing, and roll tightly.

Wrap and store in the fridge for a day or two in advance.

On Christmas Day, cook in the oven at 200°C for 40 minutes.
