Ingredients
  • Chicken thighsboneless, skinless, chopped into large cubes
  • 2 cloves Garlic
  • Gingerknob, crushed into paste
  • Canned tomatoeswhole, strained
  • 2 tbsp Peanut oil
  • Saltto taste
  • Cumin seedsground
  • Coriander seedsground
  • spoonful Garam masala
  • spoonful Kashmiri chili powder
  • spoonful Turmeric powder
  • sprinkle MSG(optional)
  • 30 cranks Black pepper
  • Green chilieschopped
  • Cilantroleaves and stems, for garnish
  • Gingerjulienned, for garnish

    Chop boneless skinless chicken thighs into large cubes.

    Crush garlic and ginger into a rough paste using a mortar and pestle.

    Strain canned tomatoes and set aside.

    Grind cumin and coriander seeds and gather other spices.

    Chop green chilies, tear cilantro leaves, and julienne ginger for garnish.

    Heat wok over high heat and add peanut oil.

    Add chicken pieces and salt to the wok, sauté until browned.

    Add ginger-garlic paste and tomatoes, cook down for 5-10 minutes.

    Add spices: cumin, coriander, garam masala, chili powder, turmeric, MSG, and black pepper.
