Chop boneless skinless chicken thighs into large cubes.

Crush garlic and ginger into a rough paste using a mortar and pestle.

Strain canned tomatoes and set aside.

Grind cumin and coriander seeds and gather other spices.

Chop green chilies, tear cilantro leaves, and julienne ginger for garnish.

Heat wok over high heat and add peanut oil.

Add chicken pieces and salt to the wok, sauté until browned.

Add ginger-garlic paste and tomatoes, cook down for 5-10 minutes.
