Perfect, Fluffy White Rice (2:1 Method)
Basic stovetop method for fluffy white rice using a 2:1 water-to-rice ratio, rinsing to reduce starch and stickiness.

Measure 1 cup dry white rice and add it to a pan/pot.

Rinse the rice with cold water: add cold water, mix to release starch, then drain. Repeat until the water is much less cloudy.

Add 2 cups water to the rinsed, drained rice. Put on the burner, cover with a tight-fitting lid, and bring to a boil over high heat.

When the water is just starting to boil, season with a couple big pinches of kosher salt and give it a quick stir.

Reduce heat to the lowest setting so it stays at a gentle rolling simmer (not boiling). Keep the lid closed; if the burner runs too hot, briefly remove the pot from heat to cool down.

Simmer until the rice absorbs the water (about 20 minutes). Check: you want the water to be gone with no excess liquid; if there’s still a little water, cook a few more minutes.

Taste to confirm it’s tender (not crunchy or mushy). Keep the lid on briefly to let any remaining moisture absorb, then serve.

For fried rice or less-sticky rice dishes, cool the rice and refrigerate; use the next day.
