  • Pork belly
  • Sunflower oil(optional)For massaging into pork
  • Table saltTo season pork
  • WaterFor the tray
  • 600 ml Clear honeyFor honey glaze
  • 1 tablespoon Cracked corianderFor honey glaze
  • 6 count Star aniseFor honey glaze
  • OnionsFor garnish
  • Bay leaf(optional)For garnish
  • Sage(optional)For garnish

    Massage sunflower oil into the pork belly.

    Season the pork belly with table salt evenly.

    Add water to the bottom of a steel tray.

    Place the pork belly on a rack and cook for 1.5 to 2 hours at 160°C until golden brown.

    Prepare the honey glaze by reducing clear honey, cracked coriander, and star anise by half.
