Slice about two cups of fresh peaches and set aside.

In a medium bowl, whisk together 1 1/2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1 1/2 teaspoons of baking powder. Set aside.

In a large bowl, cream 3/4 cup of room temperature unsalted butter until creamy, about 30 seconds.

Add 1 cup of granulated sugar to the butter and mix for about 3 minutes until fluffy.

Add 2 eggs, one at a time, mixing well after each addition.

Mix in 1/4 cup of sour cream and 1 tablespoon of vanilla extract until combined.

Gradually add the flour mixture to the wet ingredients, mixing on low until almost combined.

Fold in 3/4 cup of the sliced peaches gently.

Pour the batter into a greased 9-inch pan and smooth the top.

Arrange the remaining peach slices on top and sprinkle with additional sugar if desired.

Bake for about 45 minutes or until a skewer inserted in the middle comes out clean.
