Ingredients
  • Agria potatoesCan substitute with Yukon Gold or Kennebec
  • Olive oilFor frying

  • 8 Garlic clovesWhole
  • Bay leaves
  • Smoked paprika
  • Sweet paprika
  • Cumin
  • 1 can Whole tomatoesCan use pureed
Instructions

    Peel and cube the potatoes, keeping them uniform in size.

    Heat oil to 180°C and fry potatoes for 2-3 minutes until almost done. Remove and let cool.

    Brunoise onions and add to a pot with oil. Add whole garlic cloves and bay leaves.

    Add smoked and sweet paprika, cumin, and a can of whole tomatoes to the pot. Cook for 20 minutes.

    Blend the sauce and pass through a chinois to smoothen.

    Fry the potatoes again at 180°C until golden brown. Season immediately after frying.

    Serve potatoes with Salsa Brava and aioli, using a piping bag or Ziploc bag to drizzle sauces.
