Pasta Scarpariello
A traditional Neapolitan pasta dish featuring fresh tomatoes and a variety of cheeses.

- •Pecorino cheesegrated
- •Roma tomatoespeeled and diced
- •600 g Datterini tomatoessliced lengthwise
- •2 Garlic clovesused for soffritto
- •10 tbsp Extra virgin olive oil
- •Salt(optional)
- •Black pepper(optional)
- •Fresh basil

Grate Provolone, Smoked Scamorza, Parmigiano, and Pecorino cheeses.

Peel and dice Roma tomatoes. Slice Datterini tomatoes lengthwise.

Create a soffritto with 2 cloves of garlic in extra virgin olive oil. Remove garlic once browned.

Add Datterini tomatoes to the soffritto and cook for 10-15 minutes.

Add peeled and diced Roma tomatoes to the pan.

Cook pasta until three-quarters done, then add to the sauce to finish cooking.

Turn off the heat and add grated cheeses. Stir until melted.
