Ingredients
  • Provolone cheesegrated
  • Smoked Scamorza cheesegrated
  • Parmigiano cheesegrated
  • Pecorino cheesegrated
  • Roma tomatoespeeled and diced
  • 600 g Datterini tomatoessliced lengthwise
  • 2 Garlic clovesused for soffritto
  • 10 tbsp Extra virgin olive oil
  • Salt(optional)
  • Black pepper(optional)
  • Fresh basil
  • Calamari pastatube pasta

    Grate Provolone, Smoked Scamorza, Parmigiano, and Pecorino cheeses.

    Peel and dice Roma tomatoes. Slice Datterini tomatoes lengthwise.

    Create a soffritto with 2 cloves of garlic in extra virgin olive oil. Remove garlic once browned.

    Add Datterini tomatoes to the soffritto and cook for 10-15 minutes.

    Add peeled and diced Roma tomatoes to the pan.

    Cook pasta until three-quarters done, then add to the sauce to finish cooking.

    Turn off the heat and add grated cheeses. Stir until melted.

    Plate the pasta and garnish with fresh basil.
