  • Double cream(optional)as a carrier
  • Mascarpone(optional)as a carrier
  • Cheesevariety of your choice, cut into bits
  • Asparaguscut at an angle
  • 1/2 Unwaxed lemonzest only
  • Saltfor pasta water
  • Tagliatelleor spaghetti
  • Black pepperto taste
  • Extra virgin olive oilfor drizzling

    Melt cheese bits slowly in a bowl over boiling water.

    Boil water with a generous amount of salt.

    Cook tagliatelle or spaghetti in boiling water.

    Add asparagus to pasta two minutes before it's done.

    Drain pasta, reserving some starchy water.

    Combine pasta with melted cheese, adding starchy water as needed.
