Ingredients
  • .5 lb Guancialeor pancetta
  • 1 Sweet onions
  • Marjoramto taste
  • 14 oz San Marzano tomatoescanned
  • Datterini tomatoesfresh, from Sicily
  • Saltto taste
  • 400 g Spaghettior any long pasta
  • Pecorino cheeseto finish
Instructions

    Saute guanciale or pancetta until fat is rendered.

    Add sweet onions and marjoram to the pan and saute in the rendered fat.

    Add San Marzano and Datterini tomatoes to the pan and reduce the sauce.

    Cook spaghetti or any long pasta according to package instructions.

    Combine cooked pasta with the sauce and add pancetta back in.
