Ingredients
  • 3 :1 ratio with beef Onions
  • 1 :3 ratio with onions Beef stew meatcut into large pieces
  • Carrotsminced
  • Celeryminced
  • 2 tablespoons Olive oilor lard or clarified butter
  • White wine(optional)for deglazing
  • Waterenough to cover ingredients
  • Ziti pastacut into three pieces
  • Pecorino cheesefor serving

    Chop onions, carrots, and celery.

    Cut beef into large pieces and brown in a pan.

    Add minced carrots and celery to a dutch oven with olive oil and sauté.

    Add browned beef and onions to the dutch oven.

    Deglaze with white wine if using.

    Add enough water to cover ingredients, cover pot, and simmer for 3 hours.
