Pan-Seared Salmon with Lemon Brown Butter Sauce
Simple pan-seared salmon finished in a lemon brown butter sauce with optional herb garnish.

- •a little more than a pound Salmon filletscut into 4 fillets

Cut a little more than 1 lb salmon into 4 fillets. Season both sides with 1/2 tsp salt and 1/8 tsp black pepper.

Grate lemon peel to get 1 tsp lemon zest. Squeeze lemons to get 4 tbsp fresh lemon juice.

In a large light-colored pan over medium heat, add 4 tbsp unsalted butter. Stir and swirl often until browned, about 5 minutes.

Add salmon fillets to the browned butter. Cook 3 to 4 minutes on the first side.

Flip salmon and cook 2 to 3 minutes on the second side. In the last 2 minutes, add 1 tsp lemon zest and 4 tbsp lemon juice; spoon sauce over salmon as it cooks.

Transfer salmon to a serving plate and drizzle with the lemon brown butter pan sauce. Garnish with chopped parsley (or dill) and serve with extra sauce if desired.
