Butcher the air chilled chicken into 10 pieces: 2 wings, 2 drumsticks, 2 thighs, and 4 breast pieces.

Mix 13g each of salt, baking powder, and corn starch. Coat chicken pieces with the mixture.

Place chicken on a wire rack over a baking sheet. Air dry in the fridge for 4 hours.

Preheat oven to 450°F (232°C).

Bake chicken for 50-55 minutes until crispy.

Prepare buffalo sauce by melting 40g butter with 40g hot sauce, a sprinkle of garlic powder, and black pepper.

Prepare blue cheese dressing by mixing 30g qp mayo, 30g sour cream, 20g blue cheese, 15g milk, lemon juice, Worcestershire sauce, salt, and pepper.
