Ingredients
  • 1 1/2 Medium-sized orangesZested and juiced
  • 2 Eggs
  • 1 tsp Vanilla extractHomemade preferred
  • Orange and lemon extract(optional)Optional, homemade preferred
  • 1 cup Sugar
  • 1/2 cup Sunflower oilOr any neutral cooking oil
  • 1 1/2 cups Self-raising flourContains baking powder
  • 1 tsp Baking powderAdditional if using plain flour
  • 1/4 tsp Salt
  • 1 cup Icing sugarFor icing

    Preheat the oven to 160°C (320°F).

    Zest and juice the oranges. Set aside.

    Whisk eggs in a large mixing bowl.

    Add vanilla extract and optional orange and lemon extract. Whisk.

    Add sugar and oil. Whisk until combined.

    Mix baking powder and salt with flour. Sift into the bowl.

    Add orange zest to the mixture. Whisk until smooth.

    Pour batter into a greased and lined baking tin. Tap to remove air bubbles.

    Bake for 35 minutes. Check doneness with a cocktail stick.

    Cool on a wire rack for 15 minutes.

    Mix icing sugar with orange zest and juice for icing.

    Poke holes in the cake and drizzle with orange juice.

    Pour icing over the cake and let it set for 30 minutes.
