Orange and Lemon Cake

- •1/2 cup Oil
- •1 cup Sugar
- •1 1/2 cups Flour
- •1/4 tsp Salt

Preheat the oven to 170°C (338°F).

Grease and flour a 900g (2 lb) loaf tin.

Zest the lemon and orange, avoiding the white pith.

Juice the lemon and orange, removing any seeds.

Whisk 4 eggs in a bowl.

Add oil to the eggs and whisk.

Mix in the sugar.

Sift in the flour, salt, and baking powder. Mix until smooth.

Add the zest from the orange and lemon.

Pour the batter into the prepared loaf tin.

Bake for 50 minutes. Check with a skewer; if it comes out clean, the cake is done.

Let the cake rest for 5 minutes, then poke holes and pour 5-6 tablespoons of juice over it.

Mix icing sugar with a tablespoon of juice to make frosting. Pour over the cake.
