Noodles with Black Bean Sauce (Jjajangmyeon)

- •1 cup Korean squashor zucchini, cut into small pieces

- •1 cup Radishcut into small pieces
- •.5 lb Pork shouldercut into small pieces
- •3 tbsp Vegetable oildivided
- •0.25 cup Black bean pastestir-fried
- •2.25 cup Water
- •2 tbsp Potato starchmixed with water
- •1 tsp Sugar
- •1 tsp Sesame oil
- •1 portion Noodlescooked and rinsed in cold water
- •.5 cup Cucumber(optional)cut into thin matchsticks for garnish

Cut potatoes, squash, onion, and radish into small pieces.

Chop pork shoulder into small pieces.

Heat 1 tablespoon of vegetable oil in a pan and stir-fry the pork until crispy.

Add radish, potato, onion, and zucchini to the pan and stir-fry until the potato is half translucent.

Add 2 tablespoons of vegetable oil and black bean paste to the center of the pan and stir-fry for 1 minute.

Mix all ingredients together and add 2 cups of water. Cover and cook for 10 minutes.

Mix potato starch with 1/4 cup water and sugar. Add to the sauce to thicken.

Add sesame oil to the sauce and remove from heat.

Cook noodles according to package instructions, rinse in cold water, and serve with sauce and cucumber garnish.
