Mushroom Spaghetti

- •1 lb Button mushroomscleaned and chopped
- •1 clove Garlicsmashed
- •Flat leaf Italian parsleya handful
- •Fresh tarragon(optional)optional
- •3 tbsp Butter
- •9 tbsp Olive oil
- •Spaghetticooked

- •Black pepperto taste

Clean and chop the button mushrooms, roughly chopping a third and finely mincing the rest.

Smash the garlic clove and prepare the parsley and optional tarragon.

Boil the spaghetti in salted water until cooked.

In a pan, melt butter and add olive oil. Add the smashed garlic and parsley.

Add the mushrooms to the pan, cover, and cook on medium heat for 5 minutes.

Remove the lid, add salt and black pepper, and increase the heat to sweat out excess liquid.

Add the drained pasta to the sauce along with grated Parmigiano Reggiano cheese.

Finish with a drizzle of extra virgin olive oil before serving.
