Moist Banana Bread

- •3 Bananasripe, mashed
- •2 Eggslarge, room temperature
- •1 1/2 cups Flourall-purpose

- •1/2 tsp Vanilla extractreal vanilla extract
- •1/2 cup Raisins(optional)tiny raisins
- •1 cup Walnuts(optional)coarsely chopped, toasted

Preheat oven to 350°F (177°C).

In a large mixing bowl, add softened unsalted butter and sugar. Cream together on medium-high speed until well combined.

In a separate bowl, mash ripe bananas to a baby-food-like consistency.

Add mashed bananas to the creamed butter mixture along with eggs. Mix until combined.

In a small bowl, whisk together flour, baking soda, and salt.

Add dry ingredients to the wet mixture and stir just until combined.

Fold in raisins and toasted chopped walnuts with a spatula just until incorporated.

Grease a loaf pan with butter and dust with flour; shake out excess.
