Mini Rice Paper Bacon, Egg, and Cheese Bagels (Air Fryer)

A mini version of the viral rice paper bacon, egg, and cheese hack, rolled into small bagel-like packages and air fried until crispy.

Ingredients
  • Rice paperdip in egg on both sides
  • Baconrendered into bacon bits; reserve bacon fat
  • Eggssome scrambled in bacon fat; some used to dip rice paper
  • Cheddar cheeseadd inside; a little more on top
  • Everything bagel seasoning(optional)homemade; sprinkle on top

    Render bacon until crisp; set aside the bacon bits and reserve the bacon fat.

    Scramble some eggs in the reserved bacon fat, pulling them slightly undercooked since they will cook more in the air fryer.

    Beat/scramble additional eggs on a plate for dipping.

    Dip a sheet of rice paper in the egg on both sides and remove any excess egg.

    Add cheddar cheese, a portion of scrambled egg, bacon bits, and a little more cheese onto the rice paper.

    Roll up tightly into a small package; curl the ends up so the seam seals (no need to fold in the sides).

    Sprinkle everything bagel seasoning on top.

    Air fry at 370°F (about 188°C) for 10 minutes until golden brown and crispy; no need to flip.
