Mini Quiches: Salmon and Broccoli

- •2 pieces Broccoli floretsTrimmed

Put the water in a small pan and bring it to a simmer. Add butter and fat, stir until melted.

Add salt to flour and mix. Make a well in the flour and add the hot liquid. Mix to form dough.

Knead dough, form into puck shape, wrap, and refrigerate for at least an hour.

Trim broccoli florets and cube salmon fillets.

Dice spring onions. Grease a 12-cup muffin tin.

Whisk eggs in a jug, add milk, and whisk again.

Roll out chilled pastry to 4mm thickness and cut 12 circles. Line muffin tin cups with pastry.

Preheat oven to 180°C (355°F).

Fill each pastry cup with egg mixture, cheese, spring onions, salmon, and broccoli.
