Ingredients
  • Flour
  • Salt
  • Water
  • Lard(optional)Can substitute with solid vegetable fat
  • Butter
  • Eggs
  • Double cream
  • CheeseGrated
  • Salt(optional)To taste
  • Black pepper(optional)To taste

    Preheat the oven to 170°C (340°F).

    Make the hot water crust pastry by mixing flour and salt, then adding melted lard and butter to the flour.

    Form the dough into a log, divide into pieces, wrap in cling film, and refrigerate for at least an hour.

    Roll out the pastry and cut into circles to fit the pie tins.

    Blind bake the pastry cases with parchment paper and rice for 25 minutes.

    Whisk eggs and double cream together.
