Ingredients
  • 2 cups Flour
  • 1/2 cup Icing sugarAlso known as powdered sugar
  • 1 tsp Orange zest
  • 1/4 tsp Salt(optional)Skip if using salted butter
  • 1 cup ButterCold
  • 1 EggBeaten
  • 1 tbsp Lemon juiceFrom a small lemon
  • 4 ApplesGala, Braeburn, Pink Lady, or Granny Smith
  • 1/2 cup Sugar
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1 tsp Corn flourAlso known as corn starch
  • 20 ml WaterCold
  • 1 EggFor egg wash

    Add flour to a food processor or mix by hand.

    Add icing sugar and orange zest.

    Add salt if using unsalted butter.

    Add cold butter and pulse until breadcrumb consistency.

    Drizzle in beaten egg until dough forms.

    Flatten dough, wrap, and refrigerate for 15 minutes.

    Juice a lemon and dice apples, coating in lemon juice.

    Melt sugar in a pan, add apples, and stir-fry.

    Add cinnamon, nutmeg, and butter to apples.

    Mix corn flour with water, add to apples to thicken.

    Cool apple filling completely.

    Roll out pastry to 3mm thickness and cut circles.

    Line tart tins with pastry, prick with fork.

    Fill with apple mixture and cover with pastry lids.

    Brush with egg wash and bake at 170°C for 20 minutes.
