McDonald's Style Hash Browns

Peel and rinse 4-5 medium-sized russet potatoes.

Grate the potatoes into a large bowl.

Spread grated potatoes on a towel, twist and wring out excess water.

Heat 2 inches of peanut oil in a cast iron pan to 200°F.

Add potatoes to the oil and cook for 6 minutes, stirring occasionally.

Strain potatoes and set aside to cool.

Mix potatoes with a large pinch of salt and 8g of cornstarch.

Form potatoes into hash brown shapes and freeze for 2 hours.
