Cut pork shoulder into roughly one-inch cubes.

Place cubed pork in a pot and weigh it. Add 1 to 1.5% salt based on weight.

Add enough water to barely cover the pork.

Bring to a boil over medium-high heat, then reduce to medium-low and cook until water evaporates.
