Ingredients
  • 2 to 3 pound Pork shoulderBoneless preferred
  • 13 to 19 gram Salt1 to 1.5% of pork weight
  • WaterEnough to barely cover pork

    Cut pork shoulder into roughly one-inch cubes.

    Place cubed pork in a pot and weigh it. Add 1 to 1.5% salt based on weight.

    Add enough water to barely cover the pork.

    Bring to a boil over medium-high heat, then reduce to medium-low and cook until water evaporates.

    Once water evaporates, brown the pork in the rendered fat until crisp if serving immediately.
