Beat eggs and sugar together for 3 to 4 minutes until foamy.

Add honey and continue beating for another 3 to 4 minutes.

Melt butter and add lemon juice and a pinch of salt. Let it cool.

Sift flour and baking powder together.

Slowly incorporate flour mixture into the egg mixture.

Add cooled butter mixture to the batter and mix until smooth.

Let batter rest for at least 2 hours at room temperature.

Preheat oven to 220°C (428°F).

Grease Madeleine pan with melted butter.

Fill molds three-quarters full with batter.

Bake at 220°C for 3 minutes, then reduce to 200°C (396°F) and bake for another 6 to 7 minutes.
