    Wash organic lemons thoroughly. Remove the zest/peel, avoiding the white pith to prevent bitterness, until you have about 100 g of lemon peel.

    Place the lemon peel into a clean glass jar with a tight seal (about 1 liter capacity). Add high-proof neutral alcohol (ideally 190–195 proof) to cover/macerate the peel. Seal the jar.

    Macerate to extract lemon oils: 5–7 days if using high-proof alcohol, or about 3–6 weeks if using vodka (~40% ABV).

    After extraction, filter the lemon-alcohol extract to remove the peel/solids.

    Prepare sugar syrup: combine 270 g sugar with 517 g water. Heat gently (no need to boil) until sugar fully dissolves; around 50°C is sufficient.

    Let the sugar syrup cool completely.

    Blend the cooled sugar syrup with the filtered lemon extract, using only as much extract as needed to reach a final limoncello of about 32% ABV and total volume of 1 liter. The mixture will turn bright yellow and naturally turbid.
