Lemon Drizzle Cake

Grease and flour a 2-pound loaf tin.

Zest and juice one large lemon.

Preheat oven to 170°C (340°F).

In a large bowl, whisk together 4 eggs, sugar, 200 grams of oil, and 1 teaspoon of vanilla extract.

Add lemon zest and mix.

Sift in self-raising flour, salt, and baking powder. Whisk until smooth.

Pour mixture into prepared tin and bake for 50 minutes.

Prepare lemon juice and sugar mixture for soaking the cake.

Prepare icing with powdered sugar and lemon juice.
