- •3 Egg yolks
- •1/4 cup Olive oilhigh quality, fruity and peppery

Prepare a shortbread crust and press it into a parchment-lined baking pan.

Zest a lemon and set aside.

Mix sugar, cornstarch, and a pinch of salt.

Add a large amount of lemon juice to the mixture.

Add two eggs and three yolks to the mixture.
