Ingredients
  • Lemon zestfrom one lemon
  • Sugar
  • Cornstarchto thicken
  • Salt(optional)a pinch
  • Lemon juicea lot
  • 2 Eggs
  • 3 Egg yolks
  • 1/4 cup Olive oilhigh quality, fruity and peppery
  • Sea salt(optional)flaky

    Prepare a shortbread crust and press it into a parchment-lined baking pan.

    Zest a lemon and set aside.

    Mix sugar, cornstarch, and a pinch of salt.

    Add a large amount of lemon juice to the mixture.

    Add two eggs and three yolks to the mixture.

    Add 1/4 cup of high quality olive oil to the mixture.
