  • 1 Leeksliced lengthwise and chopped
  • Olive oilfor cooking leeks
  • Butterfor cooking leeks
  • Flourfor dough
  • Seasoningpinch, for dough
  • Warm waterfor dough
  • Cottage cheesefor serving
  • Lemon zestfor serving
  • Fresh thymefor serving

    Slice the leek lengthwise and chop it.

    Sauté the leek in a pan with olive oil and butter until tender. Season with a pinch of seasoning.

    Combine flour, a pinch of seasoning, and olive oil. Mix in the cooked leeks.

    Bring the dough together in a bowl with a drop of warm water. Cover and rest for 20 minutes.

    Dust the dough with flour, mold into a sausage shape, slice into rounds, and flatten with a rolling pin.
