  • 1 pound Ground lamb
  • 1.5 percent Salt
  • 1/4 OnionGrated
  • 1 Garlic cloveGrated
  • ParsleyHandful, chopped
  • 2 spoonfuls Ground cuminPart of spice mix
  • 1 spoonful Red chili powderPart of spice mix
  • 1 spoonful PaprikaPart of spice mix
  • 1 spoonful OreganoPart of spice mix
  • 1/4 spoonful Ground cinnamonPart of spice mix
  • YogurtFor sauce
  • Lemon zestFor sauce
  • Lemon juiceFor sauce
  • SumacFor sauce
  • Black pepperFor sauce
  • Lavash breadFor wrap
  • TomatoesDiced
  • ArugulaFor wrap

    Add ground lamb and salt to a mixing bowl.

    Grate onion and garlic, chop parsley, and add to the bowl.

    Mix in the pre-mixed spices: cumin, red chili powder, paprika, oregano, and cinnamon.

    Mix the meat with hands for 2-3 minutes until cohesive.

    Form the mixture into desired shapes and place on a griddle over medium heat.

    Cook until browned on each side, a few minutes per side.

    Prepare yogurt sauce with yogurt, lemon zest, lemon juice, sumac, black pepper, and salt.

    Assemble the wrap with lavash bread, yogurt sauce, arugula, tomatoes, pickled onions, and kofta.
