Italian Fried Cookies (Chiacchiere) for Carnival

Combine flour, salt, sugar, cinnamon, and vanilla in a large mixing bowl.

Add room temperature butter and work it in with your fingers.

Add eggs one at a time, mixing with a fork until the dough becomes shaggy.

Add 2-3 tablespoons of grappa and form a dough ball.

Knead the dough until smooth and elastic, then let it rest for at least 30 minutes.

Roll out 100 grams of dough at a time using a pasta roller, reducing the width each time.

Cut dough into desired shapes using a ravioli cutter.

Heat safflower oil to 338°F (170°C) and fry chiacchiere for about 20 seconds per side.

Transfer fried chiacchiere to absorbent paper.
