  • 4 Plum tomatoessmall dice
  • 1 Serrano pepperfinely minced
  • 1 Garlic cloveminced
  • 1/8 White onionsmall dice
  • Saltto taste
  • 1 tbsp Oil
  • 2 Tortillas
  • 2 Eggsfried sunny side up
  • Cotija cheese(optional)for topping
  • Cilantro(optional)chopped, for topping
  • Pickled onions(optional)for topping

    Prepare the salsa by dicing tomatoes, mincing serrano and garlic, and dicing onion.
