Honey Glazed Duck Breasts with Apple Sauce

Prepare the apple sauce by slicing Granny Smith apples and cooking them quickly in a pan with butter and a little lemon juice to prevent oxidization.

Blend the cooked apples until smooth and pass through a sieve for a creamy texture. Add a tiny bit of sugar if desired.

For the honey glaze, heat honey in a pan with toasted and crushed coriander seeds and star anise. Bring to a boil and reduce until thickened.
