Ingredients
  • 2 Egg yolksfree-range
  • 1 teaspoon Dijon mustard
  • 500 milliliters Olive oilup to a pint
  • 1 tablespoon Vinegar
  • Lemon juice(optional)optional, to taste

    Place a bowl at an angle using a tea towel for support.

    Add two free-range egg yolks to the bowl.

    Add 1 teaspoon of Dijon mustard and whisk together.

    Slowly add olive oil while whisking continuously to emulsify.
