Ingredients
  • .5 head Cauliflowercut into florets
  • 1 heart Celery
  • 2 Leeks
  • 1 piece Fennel(optional)optional
  • .5 cup Butter
  • 1 tbsp Plain flourheaped
  • 1 bottle Milkhalf milk, half water
  • 1 tsp English mustardheaped
  • .25 cup Parmesan cheesegrated
  • .25 cup Cheddar cheesegrated
  • .25 cup Halloumigrated
  • .25 cup Feta cheesegrated
  • 1 package Pastacooked
  • 1 cup Bread crumbsmade from stale bread
  • 1 tsp Thyme(optional)fresh or dried
  • 1 tsp Oregano(optional)fresh or dried
  • 1 tsp Rosemary(optional)fresh or dried
  • 1 clove Garlicminced
  • 1 tbsp Olive oil

    Chop cauliflower into florets and slice leaves finely.

    Chop celery, leeks, and fennel (if using).

    Fry vegetables in butter for about 5 minutes.

    Add flour to the pan and mix to form a roux.

    Slowly add milk and water, simmer for 5 minutes.

    Season with salt, pepper, and mustard.

    Grate and add cheeses to the sauce, reserving some for topping.

    Mix cooked pasta and cauliflower with the sauce.

    Blend the mixture until smooth.

    Prepare breadcrumbs with herbs, garlic, and oil.
