Homemade Mac & Cheese with Cauliflower

- •.25 cup Feta cheesegrated

- •1 cup Bread crumbsmade from stale bread

- •1 tsp Oregano(optional)fresh or dried
- •1 tsp Rosemary(optional)fresh or dried

Chop cauliflower into florets and slice leaves finely.

Chop celery, leeks, and fennel (if using).

Fry vegetables in butter for about 5 minutes.

Add flour to the pan and mix to form a roux.

Slowly add milk and water, simmer for 5 minutes.

Grate and add cheeses to the sauce, reserving some for topping.
