Weigh 700 grams of flour and add to a large bowl.

Add 1 teaspoon of salt to the flour and mix.

Add 1/2 teaspoon (2 grams) of instant yeast and mix.

Make a well in the flour and add 520 grams of water.

Mix the ingredients with a wooden spoon handle to form a shaggy dough.

Cover the bowl and let the dough rest for 45 minutes.

Fold the dough after each 45-minute rest, repeating this process three times.

After the final rest, divide the dough into four equal pieces.

Shape each piece into a baguette and place on a greased baguette tray.

Preheat the oven to 230°C (445°F) and place a pan of hot water in the oven.
